

“We’re a seafood company in the restaurant business.” To that end, making a difference within the commercial seafood industry is a high priority for us. Legal casts a wide net in its involvement in many subsidiary issues such as seafood safety and quality, fishing sustainability, nutrition valuations of product, the marketing of particular species and more. Sustainability is a hot topic in the seafood industry. While fish stocks must be protected, many traditional fishing operations are being forced out of business because of ever-tightening government regulations. Many groups such as the U.S. Ocean Commission have formed to help reconcile environmental needs with economic realities. The Commission called up recognized authorities such as Roger Berkowitz to address the assembly. Long before “food safety” was in the public spotlight, Legal Sea Foods had instituted an in-house laboratory to safeguard the quality of its raw materials. In fact, along with the Department of Commerce, Legal pioneered FDA approved criteria which protect against food-borne illness. This work resulted in the Hazard Analysis Critical Control Point (HACCP) Program, an industry standard since 1997. |
