Cold Water, Top of the Catch
We look for cold-water fish that is either “top of catch,” hauled onboard just before landing, or caught from fisherman who go out to sea for a single catch before returning to shore, referred to as day boat operators.
We implement the very highest standards for quality, sanitation, and safety at every step – from purchase, to processing, to shipping and finally to preparation in our restaurants. We work closely with our seafood partners to ensure the very best quality is upheld throughout our supply chain.
Our current menu includes freshly sourced items from the following places:
- Our Clams are harvested from State Approved Harvesting areas in New England
- Our Squid comes from Massachusetts and Rhode Island
- Our Oysters are farm raised, grown and harvested from New England as well as Nova Scotia and Prince Edward Island, Canada. Select oysters are wild harvested from Blue Point, NY
- Our Haddock and Pollock, which are MSC Certified, are sourced from the Gulf of Maine
- Our Sea Scallops are sourced from the Gulf of Maine
- Our Flounder is from Virginia
- Our Rockfish is from North Carolina
- Our Swordfish Steak is sourced from Australia
- Our Organic PEI Mussels are harvested from Prince Edward Island, Canada and are BAP 4-star Certified Sustainable
- Our Cod, which is MSC Certified, comes from Iceland
- Our Salmon is farm-raised on the Helgeland Coast in Norway
- Our Yellowfin Tuna Steak, which is MSC Certified, is sourced from Indonesia
- Our Colossal Shrimp are farm-raised in the Bay of Bengal, the northeastern part of the Indian Ocean and are All Natural, BAP 4-Star Certified Sustainable
- Our Rainbow Trout comes from Columbia and is BAP 4-Star Certified Sustainable
